  • 1 teaspoon baking powder
  • 400 grams black beans
  • 120 grams cheddar cheese
  • 2 tablespoons chili powder
  • 300 grams corn kernels
  • 180 grams cornmeal
  • 400 grams diced tomatoes
  • 1 egg
  • 2 cloves garlic
  • 450 grams ground beef
  • 1 teaspoon ground cumin
  • 240 milliliters milk
  • 1 onion
  • 0.5 teaspoon pepper
  • 1 teaspoon salt

Directions

Step 1
Preheat your oven to 375°F (190°C).
Step 2
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Step 3
Add the chopped onion and minced garlic to the skillet and cook until softened.
Step 4
Stir in the diced tomatoes, corn kernels, black beans, chili powder, ground cumin, salt, and pepper. Simmer for 10 minutes.

In a mixing bowl, combine the cornmeal, milk, egg, and baking powder. Mix well.

Spread the meat mixture evenly in a baking dish. Pour the cornmeal mixture over the top and spread it out evenly.

Sprinkle the shredded cheddar cheese over the top.

Bake in the preheated oven for 30-35 minutes, until the top is golden brown and a toothpick inserted into the cornbread layer comes out clean.
