Sweet Rice Balls, also known as Karioka, are a delicious Filipino dessert made from glutinous rice flour and coconut milk, fried to a crispy perfection and coated with a sweet caramel sauce.
Directions
Step 1
In a bowl, combine glutinous rice flour and coconut milk. Mix until a dough forms.
Step 2
Take a small portion of the dough and roll it into a ball. Repeat until all dough is used.
Step 3
Heat vegetable oil in a deep pan over medium heat.
Step 4
Fry the rice balls in batches until golden brown and crispy. Remove and drain on paper towels.
Step 5
In another pan, combine brown sugar and water. Cook over low heat until the sugar is dissolved and the mixture thickens to a caramel sauce.
Step 6
Coat the fried rice balls with the caramel sauce.
Step 7
Let them cool slightly before serving.
