  • 300 grams all-purpose flour
  • 1 teaspoon baking powder
  • 150 grams dark brown sugar
  • 0.5 teaspoon ground cardamom
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground white pepper
  • 15 ml milk
  • 0.5 teaspoon salt
  • 200 grams unsalted butter

Directions

Step 1
In a large bowl, combine the flour, dark brown sugar, baking powder, ground cinnamon, ground nutmeg, ground cloves, ground ginger, ground white pepper, ground cardamom, and salt.
Step 2
Add the cold, cubed unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
Step 3
Add the milk and mix until the dough comes together. If the dough is too dry, add a little more milk, one teaspoon at a time.
Step 4
Form the dough into a ball, cover it with plastic wrap, and refrigerate for at least 30 minutes.
Step 5
Preheat the oven to 180°C (350°F). Line baking sheets with parchment paper.
Step 6
Roll out the dough on a lightly floured surface to about 1/4 inch thick. Cut into shapes using cookie cutters, or press the dough into a speculaas mold to shape the cookies.
Step 7
Place the cookies on the prepared baking sheets, leaving some space between them.
Step 8
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly browned. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
