  • 2 acorn squash
  • 0.5 teaspoon black pepper
  • 50 grams dried cranberries
  • 3 garlic cloves
  • 450 grams ground turkey
  • 2 tablespoons olive oil
  • 1 onion
  • 50 grams parmesan cheese
  • 50 grams pecans
  • 100 grams quinoa
  • 1 teaspoon salt
  • 100 grams spinach

Directions

Step 1
Preheat the oven to 200°C (400°F).
Step 2
Brush the cut sides of the acorn squash with olive oil and season with salt and pepper. Place them cut side down on a baking sheet and roast for 40-50 minutes, or until tender.
Step 3
While the squash is roasting, heat the remaining olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.

Add the ground turkey to the skillet and cook until browned and cooked through, about 10 minutes.

Stir in the cooked quinoa, chopped spinach, dried cranberries, and chopped pecans. Cook until the spinach is wilted, about 3 minutes.

Remove the skillet from heat and stir in the grated Parmesan cheese. Season with additional salt and pepper to taste.

Once the acorn squash is tender, remove it from the oven. Carefully turn the squash halves over and fill them with the turkey mixture.
