  • 250 g all-purpose flour
  • 5 g baking powder
  • 230 g butter
  • 115 g butter (frosting)
  • 65 g cocoa powder
  • 30 g cocoa powder (frosting)
  • 4 eggs
  • 200 g marshmallows
  • 60 ml milk
  • 250 g powdered sugar
  • 1 g salt
  • 400 g sugar
  • 5 ml vanilla extract
  • 5 ml vanilla extract (frosting)

Directions

Step 1
Preheat the oven to 175°C (350°F). Grease and flour a 9x13 inch baking pan.
Step 2
In a medium saucepan, melt the butter over medium heat. Stir in the cocoa powder until smooth. Remove from heat and allow to cool slightly.
Step 3
In a large bowl, mix together the sugar, eggs, and vanilla extract. Add the cooled cocoa mixture and stir until well combined.
Step 4
In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 5
Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Step 6
Remove the cake from the oven and immediately sprinkle the miniature marshmallows evenly over the top. Return the cake to the oven for 2-3 minutes, or until the marshmallows are just beginning to melt.
Step 7
In a medium saucepan, melt the butter for the frosting over medium heat. Stir in the cocoa powder and milk until smooth. Remove from heat and whisk in the powdered sugar and vanilla extract until smooth and well combined.
Step 8
Pour the frosting over the marshmallow-topped cake, spreading it evenly to cover the entire cake. Allow the cake to cool completely before cutting into squares and serving.
