Ingredients

  • 0.5 tsp black pepper
  • 500 grams carrots
  • 2 cloves garlic
  • 20 grams ginger
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 1000 ml vegetable broth

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and cook until translucent, about 5 minutes.
Step 3
Stir in the minced garlic and ginger, cooking for another 2 minutes.
Step 4
Add the chopped carrots and vegetable broth to the pot.
Step 5
Bring to a boil, then reduce heat and simmer until the carrots are tender, about 20 minutes.
Step 6
Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches.
Step 7
Season with salt and black pepper to taste.
