Step 1
In a large mixing bowl, combine warm water and molasses. Stir until molasses is dissolved.

Add rye flour, bread flour, whole wheat flour, salt, sugar, instant coffee granules, unsweetened cocoa powder, and caraway seeds to the bowl. Mix well.

Add softened butter and apple cider vinegar. Mix until the dough starts to come together.

Sprinkle the active dry yeast over the mixture and stir to combine.

Knead the dough on a floured surface for about 10 minutes, until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.

Preheat the oven to 190°C (375°F).

Punch down the dough and shape it into a round loaf. Place it on a greased baking sheet.

Cover the loaf with a damp cloth and let rise for another 30 minutes.
