Directions
Step 1
Chop the shrimp into small pieces and place them in a large bowl.
Step 2
Pour the lime juice and lemon juice over the shrimp. Mix well to ensure the shrimp is coated in the juice.
Step 3
Cover the bowl with plastic wrap and refrigerate for 30 minutes to allow the shrimp to 'cook' in the citrus juice.
Step 4
After 30 minutes, add the diced red onion, tomatoes, jalapeno, and cilantro to the bowl. Mix everything together.
Step 5
Gently fold in the diced avocado, being careful not to mash it.
Step 6
Season the ceviche with salt and black pepper to taste.
Step 7
Serve immediately with tortilla chips or on its own.
