In a blender, combine the chopped pineapple, minced garlic, chipotle peppers, achiote paste, orange juice, white vinegar, dried oregano, ground cumin, salt, and black pepper. Blend until smooth.

Place the chicken thighs in a large bowl or resealable plastic bag. Pour the marinade over the chicken, making sure each piece is well coated. Marinate in the refrigerator for at least 2 hours, preferably overnight.
