Koshary is a traditional Egyptian dish made with a mix of rice, lentils, pasta, and tomato sauce, topped with crispy onions. It's a hearty and flavorful meal that is perfect for lunch or dinner.

Ingredients

  • 0.5 tsp black pepper
  • 100 g chickpeas
  • 1 tsp cumin powder
  • 4 cloves garlic
  • 200 g lentils
  • 150 g macaroni
  • 2 onions
  • 200 g rice
  • 1 tsp salt
  • 400 ml tomato sauce
  • 50 ml vegetable oil
  • 2 tbsp vinegar
  • 1 liter water

Directions

Step 1
Rinse the rice and lentils separately. Cook the lentils in boiling water for about 20 minutes until tender. Drain and set aside.
Step 2
Cook the rice in a separate pot according to the package instructions. Set aside.
Step 3
Cook the macaroni in boiling salted water until al dente. Drain and set aside.
Step 4
Fry the sliced onions in vegetable oil until they are golden brown and crispy. Remove and drain on paper towels.
Step 5
In a saucepan, heat some oil and sauté the minced garlic. Add the tomato sauce, cumin powder, salt, and black pepper. Let it simmer for 10 minutes.
Step 6
Add the cooked chickpeas and vinegar to the tomato sauce mixture and cook for another 5 minutes.
Step 7
In a large serving dish, layer the rice, lentils, and macaroni. Pour the tomato sauce mixture over the top and mix gently.
Step 8
Top with crispy fried onions before serving.
