Step 1
Heat the olive oil in a large pot over medium-high heat. Brown the beef stew meat in batches, then set aside.

In the same pot, add the peeled onions and cook until they are golden brown.

Add the minced garlic and cook for another minute.

Pour in the red wine and let it simmer for a few minutes, scraping up any browned bits from the bottom of the pot.

Stir in the tomato paste, canned tomatoes, bay leaves, cinnamon stick, whole cloves, allspice berries, salt, and pepper.

Return the browned beef to the pot and add the water. Stir well.

Bring the stew to a boil, then reduce the heat to low and cover. Simmer for about 2 hours, or until the beef is tender.
Step 8
Remove the bay leaves, cinnamon stick, cloves, and allspice berries before serving.
