  • 0.5 teaspoon chili flakes
  • 0.5 cup cilantro
  • 2 cucumber
  • 2 cloves garlic
  • 2 tablespoons rice vinegar
  • 1 teaspoon salt
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar

Directions

Step 1
Wash and dry the cucumbers. Cut off the ends and slice them in half lengthwise.
Step 2
Place the cucumbers cut side down on a cutting board and use the flat side of a large knife or rolling pin to smash them until they break into irregular pieces.
Step 3
Sprinkle the smashed cucumbers with salt and let them sit for 10 minutes to draw out excess water.
Step 4
In a small bowl, mix together the minced garlic, rice vinegar, soy sauce, sesame oil, sugar, and chili flakes.
Step 5
Drain any excess water from the cucumbers and transfer them to a serving bowl.
Step 6
Pour the dressing over the cucumbers and toss to coat evenly.

Garnish with chopped cilantro and serve immediately.
