Peel and cut the kohlrabi into small cubes.

Boil the kohlrabi in salted water for about 15 minutes, until tender. Drain and set aside.

In a saucepan, melt the butter over medium heat. Add the flour and stir continuously to form a roux.

Slowly add the milk to the roux, stirring constantly to avoid lumps. Continue to cook until the sauce thickens.
