Ingredients

  • 400 ml coconut milk
  • 2 garlic cloves
  • 0.5 tsp ground nutmeg
  • 1 tbsp olive oil
  • 1 onion
  • 0.5 tsp pepper
  • 700 g pumpkin puree
  • 1 tsp salt
  • 500 ml vegetable broth

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion and minced garlic. Sauté until the onion is translucent.
Step 3
Add the pumpkin puree, vegetable broth, coconut milk, salt, pepper, and ground nutmeg. Stir well to combine.
Step 4
Bring the mixture to a simmer and cook for about 15-20 minutes, stirring occasionally.
Step 5
Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.
Step 6
Taste and adjust seasoning if necessary. Serve hot and enjoy!
