Directions
Step 1
Heat the vegetable oil in a large pot over medium-high heat.

Add the pork shoulder cubes and brown them on all sides. Remove the pork and set aside.

In the same pot, add the chopped onion and garlic. Cook until the onion is translucent.

Return the pork to the pot and add the roasted Hatch chiles, tomatillos, and chicken broth.

Stir in the ground cumin, oregano, salt, and black pepper.
