Ingredients

  • 3 tablespoons all-purpose flour
  • 3 tablespoons butter
  • 2 stalks celery
  • 2 cups Cheddar cheese
  • 4 cubes chicken bouillon
  • 0.5 teaspoons ground black pepper
  • 2 cups milk
  • 1 onion
  • 6 potatoes
  • 1 teaspoon salt
  • 4 cups water

Directions

Step 1
In a large pot, combine potatoes, onion, water, celery, and bouillon cubes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
Step 2
In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes until lightly browned. Gradually whisk in milk and cook until thickened, about 5 minutes.
Step 3
Add the milk mixture to the pot with the potatoes and stir well. Cook over medium heat until heated through.
Step 4
Stir in shredded Cheddar cheese, salt, and pepper until cheese is melted and soup is smooth. Serve hot.
