  • 15 grams cocoa powder
  • 600 grams cream cheese
  • 200 grams crushed chocolate cookies
  • 3 eggs
  • 200 grams granulated sugar
  • 120 ml heavy cream
  • 10 ml red food coloring
  • 120 grams sour cream
  • 100 grams unsalted butter
  • 5 ml vanilla extract

Directions

Step 1
Preheat the oven to 175°C (350°F). Grease a 9-inch springform pan.
Step 2
In a medium bowl, combine the crushed chocolate cookies and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
Step 3
In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time, beating well after each addition.
Step 4
Blend in the sour cream, heavy cream, vanilla extract, and cocoa powder until the mixture is smooth. Stir in the red food coloring.
Step 5
Pour the filling over the crust in the springform pan.
Step 6
Bake in the preheated oven for 55-60 minutes, or until the center is set. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
Step 7
Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.
