6 Servings
  • 200 g bacon
  • 0.5 tsp black pepper
  • 500 ml chicken broth
  • 2 cloves garlic
  • 1 onion
  • 500 g purple hull peas
  • 1 tsp salt
  • 500 ml water

Directions

Rinse the purple hull peas thoroughly and set aside.
Step 2
In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
Step 3
Add the chopped onion to the pot and sauté in the bacon fat until translucent, about 5 minutes.
Step 4
Add the minced garlic and cook for another minute.
Step 5
Add the rinsed peas, chicken broth, water, salt, and black pepper to the pot. Stir well to combine.
Step 6
Bring the mixture to a boil, then reduce the heat to low and simmer for 45 minutes to 1 hour, or until the peas are tender.
Step 7
Stir occasionally and add more water if necessary to keep the peas covered.
Step 8
Once the peas are tender, stir in the cooked bacon and adjust seasoning if needed.
Step 9
Serve hot as a side dish or main course.
