  • 1 avocado
  • 425 g black beans
  • 0.5 tsp black pepper
  • 425 g black-eyed peas
  • 0.5 cup cilantro
  • 425 g corn
  • 2 cloves garlic
  • 1 green bell pepper
  • 1 jalapeno
  • 60 ml lime juice
  • 60 ml olive oil
  • 1 red bell pepper
  • 1 red onion
  • 30 ml red wine vinegar
  • 1 tsp salt
  • 2 tomatoes

Directions

Step 1
In a large bowl, combine the black beans, black-eyed peas, corn, red bell pepper, green bell pepper, tomatoes, red onion, cilantro, jalapeno, and avocado.
Step 2
In a separate small bowl, whisk together the lime juice, olive oil, red wine vinegar, garlic, salt, and black pepper.
Step 3
Pour the dressing over the bean and vegetable mixture and toss to coat.
Step 4
Cover and refrigerate for at least 1 hour to allow the flavors to meld.
Step 5
Serve chilled with tortilla chips or as a topping for grilled meats.
