Ingredients

8 Servings
  • 7 grams active dry yeast
  • 480 grams all-purpose flour
  • 60 grams butter
  • 60 grams cornmeal
  • 60 ml olive oil
  • 10 grams salt
  • 20 grams sugar
  • 240 ml warm water

Directions

Step 1
In a large bowl, combine the flour, cornmeal, salt, and sugar.
Step 2
In a separate bowl, dissolve the yeast in warm water and let it sit until it becomes frothy, about 5 minutes.
Step 3
Add the yeast mixture, olive oil, and melted butter to the dry ingredients. Stir until a dough forms.
Step 4
Turn the dough out onto a floured surface and knead until smooth and elastic, about 5-7 minutes.
Step 5
Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 hour.
Step 6
Preheat your oven to 220°C (425°F).
Step 7
Punch down the dough and turn it out onto a floured surface. Roll it out to fit your deep-dish pizza pan, pressing the dough up the sides of the pan.
Step 8
Fill with your favorite toppings and bake for 20-25 minutes, or until the crust is golden brown and the cheese is bubbly.
