  • 2 liters milk
  • 60 grams plain yogurt

Directions

Step 1
Heat the milk in a large pot over medium heat until it reaches 85°C. Stir occasionally to prevent a skin from forming.

Remove the pot from the heat and let the milk cool down to 43°C.
Step 3
Stir in the plain yogurt into the cooled milk until well combined.
Step 4
Pour the mixture into a clean container and cover it with a lid or plastic wrap.
Step 5
Place the container in a warm environment (about 40°C) for 6-12 hours to allow the yogurt to ferment. The longer it ferments, the tangier it will be.
Step 6
Once the yogurt has reached your desired taste and consistency, refrigerate it for at least 2 hours before serving.
