Ingredients

  • 1800 g Concord grapes
  • 60 ml lemon juice
  • 700 g sugar
  • 240 ml water

Directions

Step 1
Wash and stem the Concord grapes.
Step 2
Place the grapes in a large pot and add the water.
Step 3
Bring to a boil over medium heat, then reduce to a simmer. Cook until the grapes are soft and the skins have burst, about 10 minutes.
Step 4
Strain the mixture through a fine-mesh sieve or cheesecloth to remove the skins and seeds. You should have about 4 cups of grape juice.
Step 5
Return the grape juice to the pot and add the sugar and lemon juice.
Step 6
Bring to a boil over medium heat, stirring frequently until the sugar is dissolved.
Step 7
Continue to boil until the mixture reaches the gel stage, which is about 220°F (104°C). This can take about 20 minutes.
Step 8
Remove from heat and skim off any foam.
Step 9
Ladle the jelly into sterilized jars, leaving a 1/4 inch headspace. Seal with lids and process in a boiling water bath for 10 minutes.
Step 10
Let the jars cool and check for seals. Store in a cool, dark place.
