Step 1
Heat the chicken broth in a saucepan and keep it warm over low heat.

In a large pan, heat 1 tablespoon of olive oil and 15 grams of butter over medium heat.

Add the chopped onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the risotto rice and stir to coat the grains with the oil and butter.

Pour in the white wine and cook until it has evaporated.

Begin adding the warm chicken broth, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding the next ladle.

Continue this process until the rice is creamy and cooked to al dente, about 18-20 minutes.

In another pan, heat the remaining olive oil and butter. Add the shrimp, season with salt and black pepper, and cook until pink and opaque, about 3-4 minutes.
