  • 240 grams all-purpose flour
  • 5 grams baking powder
  • 5 grams baking soda
  • 100 grams brown sugar
  • 2 eggs
  • 200 grams granulated sugar
  • 5 grams ground cinnamon
  • 1 gram ground cloves
  • 2.5 grams ground ginger
  • 2.5 grams ground nutmeg
  • 425 grams pumpkin puree
  • 1 grams salt
  • 5 ml vanilla extract
  • 120 ml vegetable oil
  • 60 ml water

Directions

Step 1
Preheat your oven to 175°C (350°F). Grease and flour a 9x5 inch loaf pan.
Step 2
In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.

In another bowl, mix together the granulated sugar, brown sugar, and vegetable oil until well combined.

Add the eggs to the sugar mixture one at a time, beating well after each addition.

Stir in the pumpkin puree, water, and vanilla extract until fully incorporated.

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
