  • 100 grams apple
  • 10 grams baking powder
  • 5 grams baking soda
  • 1 banana
  • 100 grams carrot
  • 5 grams cinnamon
  • 2 eggs
  • 60 ml honey
  • 240 ml milk
  • 60 grams raisins
  • 100 grams rolled oats
  • 2 grams salt
  • 5 ml vanilla extract
  • 60 grams walnuts
  • 200 grams whole wheat flour

Directions

Step 1
Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
Step 2
In a large bowl, combine the whole wheat flour, rolled oats, baking powder, baking soda, salt, and ground cinnamon.
Step 3
In another bowl, whisk together the eggs, milk, honey, and vanilla extract.
Step 4
Add the wet ingredients to the dry ingredients and mix until just combined.
Step 5
Fold in the mashed banana, grated carrot, grated apple, chopped walnuts, and raisins.
Step 6
Divide the batter evenly among the muffin cups.
Step 7
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
