Ingredients

  • 200 g brown sugar
  • 30 g butter
  • 30 g cornstarch
  • 3 egg yolks
  • 1 pie crust
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 250 ml whipped cream
  • 500 ml whole milk

Directions

Step 1
In a medium saucepan, combine brown sugar, cornstarch, and salt.
Step 2
Gradually add milk, stirring constantly until the mixture is smooth.
Step 3
Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
Step 4
Boil for 1 minute, then remove from heat.
Step 5
In a small bowl, beat the egg yolks. Gradually add a small amount of the hot mixture to the yolks, stirring constantly.
Step 6
Return the egg yolk mixture to the saucepan, stirring constantly.
Step 7
Cook for 2 more minutes, then remove from heat and stir in butter and vanilla extract.
Step 8
Pour the mixture into the pre-baked pie crust and let it cool to room temperature.
Step 9
Chill in the refrigerator for at least 2 hours before serving.
Step 10
Top with whipped cream before serving.
