  • 800 ml coconut milk
  • 1 pinch salt
  • 200 g sugar
  • 1 tsp vanilla extract

Directions

Step 1
In a medium saucepan, combine the coconut milk and sugar.

Cook over medium heat, stirring constantly until the sugar is completely dissolved.
Step 3
Remove from heat and stir in the vanilla extract and a pinch of salt.
Step 4
Let the mixture cool to room temperature, then refrigerate for at least 2 hours until thoroughly chilled.
Step 5
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
Step 6
Transfer the churned ice cream into a lidded container and freeze for at least 4 hours or until firm.
