A delicious and healthy alternative to traditional pizza, using zucchini as the base. It's packed with flavor and perfect for a quick dinner.
Directions
Step 1
Preheat the oven to 400°F (200°C).
Step 2
In a large bowl, combine the shredded zucchini, eggs, 1 cup of mozzarella cheese, Parmesan cheese, Italian seasoning, salt, and pepper. Mix well.
Step 3
Press the zucchini mixture into a greased 9x13 inch baking dish to form a crust. Bake for 20 minutes.
Step 4
While the crust is baking, cook the ground beef in a skillet over medium heat until browned. Add the onion and garlic and cook until the onion is translucent.
Step 5
Stir in the tomato sauce, green bell pepper, red bell pepper, and mushrooms. Cook until the vegetables are tender.
Step 6
Remove the zucchini crust from the oven and spread the meat and vegetable mixture over it.
Step 7
Sprinkle the remaining 1 cup of mozzarella cheese over the top.
Step 8
Return to the oven and bake for an additional 20 minutes, or until the cheese is melted and bubbly.
