Ingredients

  • 2 tablespoons butter
  • 1 cup carrot
  • 4 cups cooked rice
  • 2 eggs
  • 2 tablespoons green onions
  • 1 cup onion
  • 1 cup peas
  • 1 teaspoon sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil

Directions

Step 1
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Step 2
Add the diced onion and carrot to the skillet and sauté for 3-4 minutes until they begin to soften.

Push the vegetables to one side of the skillet and pour the beaten eggs onto the empty side. Scramble the eggs until fully cooked.

Add the remaining tablespoon of vegetable oil, then add the cooked rice and frozen peas to the skillet. Stir well to combine all ingredients.

Pour the soy sauce and sesame oil over the rice mixture, stirring to evenly distribute the flavors.

Add the butter and chopped green onions, stirring until the butter is fully melted and the ingredients are well mixed.

Cook for an additional 2-3 minutes, allowing the rice to slightly crisp up.
