Ingredients

  • 8 slices bacon
  • 0.5 tsp black pepper
  • 200 g cheddar cheese
  • 250 g cherry tomatoes
  • 2 chicken breasts
  • 240 ml mayonnaise
  • 60 ml milk
  • 120 ml ranch dressing
  • 0.5 red onion
  • 1 head romaine lettuce
  • 450 g rotini pasta
  • 1 tsp salt

Directions

Step 1
Cook the rotini pasta according to package instructions. Drain and set aside to cool.
Step 2
In a large skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels. Once cool, crumble into pieces.
Step 3
Season the chicken breasts with salt and pepper. In the same skillet, cook the chicken over medium heat until fully cooked, about 6-7 minutes per side. Remove from heat and let rest before slicing into bite-sized pieces.
Step 4
In a large bowl, combine the cooled pasta, crumbled bacon, sliced chicken, cherry tomatoes, chopped romaine lettuce, red onion, and shredded cheddar cheese.
Step 5
In a separate bowl, whisk together the mayonnaise, ranch dressing, milk, salt, and black pepper until smooth.
Step 6
Pour the dressing over the pasta mixture and toss to coat evenly.
Step 7
Chill the salad in the refrigerator for at least 30 minutes before serving.
