Preheat your oven to 160°C (325°F).

In a medium bowl, combine the graham cracker crumbs, 50 grams of sugar, and melted butter. Press the mixture into the bottom of a 23 cm (9 inch) springform pan.

In a large bowl, beat the cream cheese and 200 grams of sugar together until smooth. Add the eggs one at a time, beating well after each addition.

Blend in the sour cream, key lime juice, vanilla extract, and lime zest until smooth. Pour the mixture over the graham cracker crust in the springform pan.

Bake the cheesecake in the preheated oven for about 60 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about 1 hour.

Refrigerate the cheesecake for at least 4 hours, or overnight, before serving.
