Ingredients

  • 7 g active dry yeast
  • 480 g all-purpose flour
  • 50 g brown sugar
  • 8 g ground cinnamon
  • 150 g raisins
  • 5 g salt
  • 50 g sugar
  • 60 g unsalted butter
  • 240 ml warm milk

Directions

Step 1
In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5 minutes until frothy.

In a large bowl, mix together flour and salt. Pour in the yeast mixture and melted butter. Stir to combine.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

Punch down the dough and roll it out into a rectangle.

Sprinkle the dough with ground cinnamon, brown sugar, and raisins.

Roll the dough tightly into a log and place it in a greased loaf pan.

Cover and let it rise again for about 30 minutes.

Preheat the oven to 180°C (350°F).

Bake the bread for 30-35 minutes or until golden brown.

Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
