Directions
Step 1
Blanch the tomatoes in boiling water for 1-2 minutes until their skins begin to peel. Transfer them to an ice bath to cool, then peel and dice the tomatoes.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Add the diced tomatoes to the skillet, along with the salt, black pepper, and sugar. Stir to combine.
