Ingredients

  • 0.5 tsp black pepper
  • 30 g fresh basil leaves
  • 4 garlic cloves
  • 2 tbsp olive oil
  • 1000 g ripe tomatoes
  • 1 tsp salt
  • 1 tsp sugar

Directions

Step 1
Blanch the tomatoes in boiling water for 1-2 minutes until their skins begin to peel. Transfer them to an ice bath to cool, then peel and dice the tomatoes.
Step 2
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Step 3
Add the diced tomatoes to the skillet, along with the salt, black pepper, and sugar. Stir to combine.
Step 4
Simmer the sauce over medium-low heat for about 30 minutes, stirring occasionally, until it thickens.
Step 5
Stir in the chopped basil leaves and cook for another 5 minutes. Adjust seasoning to taste.
Step 6
Serve the sauce hot over pasta, or use as a base for other dishes.
