Ingredients

  • 7 g active dry yeast
  • 240 g bread flour
  • 85 g honey
  • 5 g salt
  • 60 ml vegetable oil
  • 240 ml warm water
  • 210 g whole wheat flour

Directions

Step 1
In a large bowl, dissolve honey in warm water. Sprinkle yeast over the top, and let stand for about 5 minutes, until foamy.
Step 2
Mix in whole wheat flour, bread flour, and salt. Stir in the vegetable oil. When the dough has pulled together, turn it out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
Step 3
Lightly oil a large mixing bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
Step 4
Preheat oven to 375 degrees F (190 degrees C).

Deflate the dough, and turn it out onto a lightly floured surface. Divide the dough into two equal pieces, and form into loaves. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth, and let rise until doubled in volume, about 40 minutes.
Step 6
Bake at 375 degrees F (190 degrees C) for about 25 minutes, or until the top is golden brown and the loaf sounds hollow when tapped on the bottom.
