  • 400 g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 240 ml buttermilk
  • 226 g cream cheese
  • 4 eggs
  • 400 g granulated sugar
  • 120 ml key lime juice
  • 30 ml key lime juice (for frosting)
  • 2 tbsp key lime zest
  • 1 tsp key lime zest (for frosting)
  • 300 g powdered sugar
  • 0.5 tsp salt
  • 226 g unsalted butter

Directions

Step 1
Preheat the oven to 175°C (350°F). Grease and flour two 9-inch round cake pans.
Step 2
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Step 3
In a large bowl, beat the butter and granulated sugar until light and fluffy.
Step 4
Add the eggs one at a time, beating well after each addition.
Step 5
Mix in the key lime juice and zest.
Step 6
Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture.
Step 7
Divide the batter evenly between the prepared cake pans and smooth the tops.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Step 9
Cool the cakes in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
Step 10
To make the frosting, beat the cream cheese until smooth.

Gradually add the powdered sugar, beating until light and fluffy.
Step 12
Mix in the key lime juice and zest.
Step 13
Frost the cooled cakes with the key lime cream cheese frosting.
