  • 360 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 150 grams blueberries
  • 100 grams brown sugar
  • 2 eggs
  • 200 grams granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 120 milliliters vegetable oil
  • 250 grams zucchini

Directions

Step 1
Preheat your oven to 175°C (350°F). Grease and flour a 9x5 inch loaf pan.
Step 2
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

In another bowl, beat the eggs, then add the vegetable oil, vanilla extract, granulated sugar, and brown sugar. Mix until well combined.

Stir the wet ingredients into the dry ingredients until just combined. Do not overmix.
Step 5
Fold in the shredded zucchini and blueberries gently.
Step 6
Pour the batter into the prepared loaf pan and spread it out evenly.
Step 7
Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
