White Cheese Chicken Lasagna

A creamy and delicious twist on the classic lasagna, featuring layers of chicken, spinach, and a rich white cheese sauce.

Ingredients

  • 0.5 tsp black pepper
  • 60 g butter
  • 2 chicken breasts
  • 50 g flour
  • 150 g fresh spinach
  • 2 cloves garlic
  • 9 lasagna noodles
  • 500 ml milk
  • 450 g mozzarella cheese
  • 1 tbsp olive oil
  • 1 onion
  • 60 g parmesan cheese
  • 450 g ricotta cheese
  • 1 tsp salt

Directions

Step 1
Preheat oven to 180°C (350°F).
Step 2
Cook the lasagna noodles according to package instructions. Drain and set aside.
Step 3
In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and cook until softened.
Step 4
Stir in the spinach and cook until wilted. Remove from heat and set aside.
Step 5
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
Step 6
Gradually whisk in the milk, continuing to whisk until the sauce thickens. Season with salt and black pepper.
Step 7
Add the ricotta cheese to the sauce and stir until well combined.
Step 8
In a 9x13 inch baking dish, spread a thin layer of the cheese sauce. Place three lasagna noodles on top.
Step 9
Spread half of the shredded chicken over the noodles, followed by half of the spinach mixture, and one-third of the mozzarella cheese.
Step 10
Repeat the layers, ending with the remaining lasagna noodles and cheese sauce.
Step 11
Sprinkle the top with the remaining mozzarella and Parmesan cheese.
Step 12
Bake in the preheated oven for 35-40 minutes, or until the top is golden and bubbly.
Step 13
Let the lasagna rest for 10 minutes before serving. Enjoy!
