Lamingtons are an Australian dessert consisting of sponge cake squares coated in chocolate and rolled in desiccated coconut. Perfect for a sweet treat or special occasion.

Ingredients

  • 250 g all-purpose flour
  • 10 g baking powder
  • 180 ml boiling water
  • 50 g cocoa powder
  • 200 g desiccated coconut
  • 2 eggs
  • 200 g granulated sugar
  • 125 ml milk
  • 300 g powdered sugar
  • 1 pinch salt
  • 125 g unsalted butter
  • 5 ml vanilla extract

Directions

Step 1
Preheat your oven to 180°C and grease a square cake pan.
Step 2
In a bowl, sift together the flour, baking powder, and salt.
Step 3
In another bowl, cream the butter and granulated sugar until light and fluffy.
Step 4
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Step 5
Gradually add the flour mixture, alternating with the milk, beginning and ending with the flour. Mix until just combined.

Pour the batter into the prepared pan and smooth the top.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, cut the cake into squares.

For the icing, combine the powdered sugar and cocoa powder in a bowl, then gradually mix in the boiling water until smooth.

Dip each cake square into the chocolate icing, allowing any excess to drip off, then roll in the desiccated coconut to coat.
