Step 1
Boil the potatoes in a large pot of salted water until tender, about 20 minutes. Drain and let cool slightly.

Peel the potatoes and pass them through a potato ricer into a large bowl. Let them cool completely.

Add the flour, egg, and salt to the potatoes and mix well until a dough forms. If the dough is too sticky, add more flour as needed.

On a floured surface, divide the dough into small portions and roll each portion into a long rope about 1 cm thick. Cut the ropes into 2 cm pieces to form the gnocchi.

Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.

Add the canned tomatoes and cook until the sauce thickens, about 10-15 minutes. Season with salt to taste.
