  • 300 g all-purpose flour
  • 1 tsp baking powder
  • 2 tbsp cornstarch
  • 1 egg
  • 500 g fresh blueberries
  • 200 g granulated sugar
  • 2 tbsp lemon juice
  • 0.5 tsp salt
  • 225 g unsalted butter
  • 1 tsp vanilla extract

Directions

Step 1
Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
Step 2
In a medium bowl, mix together the flour, sugar, baking powder, and salt.
Step 3
Cut in the cold, diced butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
Step 4
In a small bowl, whisk together the egg and vanilla extract. Add to the flour mixture and mix until combined.
Step 5
Press half of the dough into the prepared baking dish to form a crust.
Step 6
In another bowl, combine the blueberries, lemon juice, and cornstarch. Mix until the blueberries are well coated.
Step 7
Spread the blueberry mixture evenly over the crust.
Step 8
Crumble the remaining dough over the blueberry layer.
Step 9
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown.
Step 10
Allow to cool completely before cutting into bars and serving.
