A rich and moist fruit cake bursting with traditional Jamaican flavors. This cake is perfect for festive occasions and is made with a variety of dried fruits soaked in rum and wine, giving it a unique and delightful taste.

  • 2 tsp almond essence
  • 2 tsp baking powder
  • 500 g brown sugar
  • 500 g butter
  • 250 g cherries
  • 500 ml dark rum
  • 10 eggs
  • 500 g flour
  • 250 g mixed peel
  • 2 tsp mixed spice
  • 500 g prunes
  • 500 g raisins
  • 500 ml red wine
  • 2 tsp vanilla extract

Directions

Step 1
Soak raisins, prunes, cherries, and mixed peel in dark rum and red wine for at least a week.
Step 2
Preheat the oven to 150°C (300°F).
Step 3
Cream butter and brown sugar until light and fluffy.
Step 4
Add eggs one at a time, beating well after each addition.
Step 5
Sift together flour, baking powder, and mixed spice.
Step 6
Fold the flour mixture into the creamed mixture.
Step 7
Blend the soaked fruit mixture in a blender until smooth.
Step 8
Add the blended fruit mixture, vanilla extract, and almond essence to the batter and mix well.
Step 9
Pour the batter into a greased and lined cake tin.
Step 10
Bake in the preheated oven for 2.5 to 3 hours or until a skewer inserted into the center comes out clean.
Step 11
Allow the cake to cool in the tin before turning out onto a wire rack.
Step 12
Optional: Brush the cake with additional rum or wine and wrap in foil to store for a more intense flavor.
