Traditional Portuguese Sopas

A flavorful and hearty Portuguese soup, perfect for warming up on a cold day. This traditional dish is made with beef, cabbage, potatoes, and aromatic spices.

Ingredients

  • 2 bay leaves
  • 1.5 kg beef chuck roast
  • 0.5 tsp black pepper
  • 1 cabbage
  • 1 cinnamon stick
  • 1 bunch fresh mint leaves
  • 4 garlic cloves
  • 2 onion
  • 1 tbsp paprika
  • 4 potatoes
  • 1 tsp salt
  • 100 g tomato paste
  • 2 L water

Directions

Step 1
In a large pot, add the beef chuck roast and water. Bring to a boil, then reduce heat and simmer for 2 hours or until the meat is tender.
Step 2
Remove the beef from the pot, let it cool slightly, then cut into bite-sized pieces. Return the beef to the pot.
Step 3
Add the chopped onions, minced garlic, chopped cabbage, and chopped potatoes to the pot.
Step 4
Stir in the tomato paste, bay leaves, paprika, salt, black pepper, and cinnamon stick.
Step 5
Simmer the soup for another 1 hour or until the vegetables are tender.
Step 6
Remove the bay leaves and cinnamon stick. Add the fresh mint leaves just before serving.
Step 7
Serve hot with crusty bread.
