  • 1 can black beans
  • 0.5 teaspoon black pepper
  • 2 chicken breasts
  • 6 cups chicken broth
  • 1 teaspoon chili powder
  • 0.5 cup cilantro
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 can diced tomatoes
  • 3 garlic cloves
  • 1 jalapeno
  • 1 tablespoon lime juice
  • 2 tablespoons olive oil
  • 1 onion
  • 1 red bell pepper
  • 1 teaspoon salt

Directions

Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add chopped onion, garlic, and jalapeno. Sauté until onions are translucent, about 5 minutes.

Stir in chopped red bell pepper, cumin, and chili powder. Cook for another 2 minutes.

Add chicken broth, diced tomatoes, corn, and black beans. Stir to combine.

Place the chicken breasts in the pot. Bring the soup to a boil, then reduce heat and simmer for 20 minutes or until chicken is cooked through.

Remove the chicken from the pot and shred it using two forks.
