Directions
Step 1
In a bowl, combine the chicken slices with soy sauce, ginger, and garlic. Let it marinate for 15 minutes.

Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the chicken and stir-fry until fully cooked, about 5-7 minutes. Remove the chicken from the pan and set aside.

In the same pan, add the remaining tablespoon of vegetable oil. Add the broccoli, carrots, and bell pepper. Stir-fry for about 5 minutes, or until the vegetables are tender-crisp.
Step 4
In a small bowl, mix the cornstarch and water to create a slurry. Pour this mixture into the pan with the vegetables and stir well.

Return the cooked chicken to the pan and mix everything together. Cook for another 2-3 minutes, until the sauce thickens and coats the chicken and vegetables well.
