Korean Soybean Paste Soup

A traditional Korean stew made with fermented soybean paste (doenjang), tofu, vegetables, and sometimes meat or seafood. It's hearty, flavorful, and perfect for a comforting meal.

Ingredients

4 Servings
  • 3 tbsp doenjang (fermented soybean paste)
  • 2 garlic cloves
  • 1 green chili pepper
  • 2 green onions
  • 100 g mushrooms
  • 1 onion
  • 1 potato
  • 1 tbsp sesame oil
  • 150 g tofu
  • 600 ml water
  • 1 zucchini

Directions

Step 1
In a pot, bring 600 ml of water to a boil.
Step 2
Add 3 tbsp of doenjang (fermented soybean paste) to the boiling water and stir well until dissolved.
Step 3
Add the diced potato and cook for about 5 minutes.
Step 4
Add the onion, zucchini, mushrooms, and minced garlic to the pot. Cook for another 5 minutes.
Step 5
Add the cubed tofu and green chili pepper. Let it simmer for 10 minutes.
Step 6
Drizzle 1 tbsp of sesame oil over the soup and stir well.
Step 7
Garnish with chopped green onions before serving.
