  • 2 tsp black pepper
  • 4 sprigs fresh rosemary
  • 4 garlic cloves
  • 2 kg leg of lamb
  • 2 tbsp olive oil
  • 1 tbsp salt

Directions

Step 1
Preheat your oven to 180°C (350°F).
Step 2
Make small incisions all over the leg of lamb and insert the slices of garlic into the incisions.
Step 3
Rub the lamb with olive oil, then sprinkle with salt and pepper.
Step 4
Place the rosemary sprigs on top of the lamb.
Step 5
Put the lamb in a roasting pan and roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 60°C (140°F) for medium-rare.
Step 6
Remove the lamb from the oven and let it rest for 15 minutes before carving.
