Ingredients

  • 1 bay leaf
  • 0.5 tsp black pepper
  • 1 carrot
  • 2 celery stalks
  • 400 g crushed tomatoes
  • 500 g fish fillets
  • 1 l fish stock
  • 2 tbsp fresh parsley
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • 2 tbsp tomato paste

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the chopped onion, minced garlic, sliced carrot, and chopped celery. Cook until the vegetables are softened.
Step 3
Stir in the tomato paste and cook for another 2 minutes.
Step 4
Add the crushed tomatoes, fish stock, red pepper flakes, bay leaf, salt, and black pepper. Bring to a boil.
Step 5
Reduce the heat and let the soup simmer for 20 minutes.
Step 6
Add the fish fillets and continue to simmer for another 10 minutes, or until the fish is cooked through.
Step 7
Remove the bay leaf and stir in the chopped fresh parsley before serving.
