Directions
Step 1
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.
Step 2
In a small saucepan, combine rice vinegar, sugar, and salt. Heat until dissolved. Pour over the cooked rice and mix well. Allow to cool.

Place a nori sheet on a bamboo sushi mat. Spread an even layer of sushi rice over the nori, leaving a 2cm border at the top edge.
Step 4
Arrange slices of salmon and avocado along the bottom edge of the rice. Sprinkle tempura bits over the salmon and avocado.
Step 5
In a small bowl, mix sriracha sauce and mayonnaise. Drizzle over the salmon and avocado.
Step 6
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge with a little water.
Step 7
Using a sharp knife, cut the roll into 6-8 pieces. Serve with soy sauce, wasabi, and pickled ginger.
