Ingredients

  • 120 grams all-purpose flour
  • 240 grams cottage cheese
  • 120 grams cream cheese
  • 1 egg yolk
  • 2 eggs
  • 240 milliliters milk
  • 1 pinch salt
  • 50 grams sugar
  • 30 grams unsalted butter
  • 1 teaspoon vanilla extract
  • 60 milliliters water

Directions

Step 1
In a mixing bowl, combine flour, milk, water, eggs, melted butter, and salt. Whisk until smooth to form the crepe batter.
Step 2
Heat a non-stick pan over medium heat and lightly grease with butter. Pour a small amount of batter into the pan, swirling to coat the bottom evenly. Cook until the underside is lightly golden, then flip and cook the other side briefly. Repeat with remaining batter.
Step 3
In another bowl, mix together cottage cheese, cream cheese, sugar, vanilla extract, and egg yolk until smooth to make the filling.
Step 4
Place a spoonful of filling in the center of each crepe. Fold the sides over the filling, then fold the top and bottom to form a neat package.
Step 5
Heat a bit of butter in a pan over medium heat. Cook the filled blintzes until golden brown on both sides.
