Step 1
Rinse the sushi rice under cold water until the water runs clear.

Combine the rice and water in a saucepan and bring to a boil. Reduce the heat, cover, and simmer for 20 minutes until the water is absorbed and the rice is tender.

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved.

Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Let the rice cool to room temperature.

Place a bamboo sushi mat on a flat surface and cover it with plastic wrap. Lay a nori sheet on the mat, shiny side down.

Spread a thin layer of rice over the nori, leaving a 2cm border at the top.

Arrange the cucumber, carrot, avocado, and tofu strips in a line along the bottom edge of the rice.

Using the sushi mat, roll the nori and rice over the fillings, applying gentle pressure to form a tight roll. Seal the edge with a little water.

Repeat with the remaining ingredients to make additional rolls.
Step 10
Slice each roll into 6-8 pieces with a sharp knife. Serve with soy sauce for dipping, if desired.
